            Barcelona Spiced NY Strip with Smoked Tomato Jam
            
                
                    Directions
                    
    - Rub the loin with olive oil then coat the meat with the spice rub. 
- Sear the roast. 
- Place in a 325 F oven until cooked to desired temperature. 
- Serve with Smoked Tomato Jam.
 
                
                    Ingredients
                    
                                    - 1 Braveheart NY Strip Steak
- 4 oz oil, olive
- 2 cups Barcelona Spice Mix, (see recipe below)
-  smoked tomato jam

                            Directions
                            
    - Grind the fennel seed and peppercorns in a spice grinder. 
- Add the rest of the spices and mix.
 
                        
                            Ingredients
                            
                                            - 1/4 cup cayenne pepper
- 2 tbsp cumin powder
- 1 cup fennel seed
- 1/4 cup garlic, powder
- 1/4 cup paprika
- 2 tbsp peppercorns, whole
- 1/2 cup salt, kosher 
 
                     
                 
                
                
                
                    Smoked Tomato Jam
                    
                        
                            Directions
                            
    - Combine in a pot and cook down. 
- Hit with a stick blender. Reduce until thick.
