Cajun Burger with Fried Green Onion

Directions

  1. On bottom of bun place patty and top with green onions. On top portion of bun place lettuce and tomato.
  2. Serve with fries on heated entree plate.

Ingredients

  • 1 bun Heritage Ovens® Roll(s), Kaiser, per burger
  • 1/2 ounce Peak Fresh Produce® Lettuce, Iceberg, Shredded
  • 1 slice Peak Fresh Produce® Tomato(es)

Braveheart® Cajun Burger Patty

Directions

  1. Mix all ingredients together in a bowl and form into 8 oz patties, wrap individually and refrigerate until needed.
  2. Grill patty to desired temperature. Toast bun, spread each half with Cajun Aioli.

Ingredients

  • 1 lb Braveheart® Black Angus Beef Ground
  • 2 oz pecans, chopped
  • 4 oz sausage, andouille, small dice
  • 1 oz tasso

Cajun Aioli

Directions

  1. In a robocoup add eggs*, mustards, garlic and lemon juice; puree.
  2. Slowly add oil until emulsified. Salt and pepper to taste.

Ingredients

  • 4 oz mustard, creole
  • 2 tbsp mustard, dijon
  • 4 egg, yolk(s)
  • 2 Peak Fresh Produce® Garlic, Clove(s), minced
  • 1/2 lemon Peak Fresh Produce® Lemon(s), juiced
  • 20 oz Piancone® Oil, Olive
  • 3 tbsp vinegar, wine

Fried Green Onions

Directions

  1. Preheat deep fryer to 360 degrees.
  2. Dredge onions in flour, then egg wash and seasoned flour. Cook for 1 minute in deep fryer. Serve.
