German Potato Salad
Directions
- Place bacon in large saute pan over medium heat cooking until bacon is crispy. Remove bacon from pan and drain on towel.
- Add onion to pan with bacon fat and cook for 2-3 minutes. Pour in vinegar and sugar and cook for 1-2 minutes then remove from heat to cool.
- Place potatoes in bowl then pour the mixture from the pan over them. Add the parsley and bacon to the bowl.
- Toss to combine and serve.

- 2 1/2 lbs Peak Fresh Produce® Yukon gold potatoes, diced, peeled, boiled, and cooled
- 1/2 lb Ridgecrest® Bacon, chopped
- 1 ea Peak Fresh Produce® Onion(s), Yellow, diced
- 2 tbsp Peak Fresh Produce® Parsley, Fresh, minced
- 1/4 cup West Creek® white vinegar
- 3 tbsp West Creek® Sugar, Granulated
- 1/4 tsp Magellan® sea salt
- 1/4 tsp Magellan® Black Pepper, ground
