Grilled Corn Salad
Directions
- Rub corn in olive oil then place on medium heat area of grill to lightly char.
- Remove from grill and cut the kernels from the cob into a bowl.
- Add remaining ingredients to bowl and toss then sprinkle with cilantro and serve.
Ingredients
- 8 ea Peak Fresh Produce® Corn, husked and silk removed
- 2 tbsp Roma® Oil, Olive
- 1 ea Peak Fresh Produce® Lime(s), juice and zest
- 1 cup Peak Fresh Produce® Onion(s), Green, chopped
- 2 tbsp Peak Fresh Produce® Cilantro, Fresh, chopped
- 1/4 cup West Creek® Mayonnaise
- 1 tsp Roma® Cumin, Ground
- 1/4 cup Peak Fresh Produce® Onion(s), Red, small dice
- 1/2 cup Roma® Cheese, Feta, crumbled
- 1/8 tsp Magellan® sea salt
- 1/8 tsp Magellan® Black Pepper, ground
