Jerk Shrimp with Roasted Brussel Sprouts

Directions

  1. In a sauté pan add bacon over medium heat and cook bacon until crisp. Remove bacon and allow to drain excess grease on towel. Leave rendered bacon fat in pan.
  2. Now add onions, garlic, and Brussel sprouts. Cook for 2-3 minutes over medium heat.
  3. Season with salt and pepper then remove from pan and transfer to large mixing bowl.
  4. In a separate sauté pan over medium high heat add olive oil.
  5. Peel shrimp then place in a small bowl toss shrimp with jerk seasoning. Add shrimp to sauté pan and cook for 1-2 minutes. Remove shrimp from pan and add to Brussel sprouts.
  6. Now add vinaigrette to bowl and toss. Separate mixture into two bowls and garnish with cojita cheese and micro greens then serve.

  • 1/4 lb Ridgecrest® Bacon, Applewood Slice(s), diced
  • 4 cups Peak Fresh Produce® Brussel sprouts, blanched
  • 1/2 cup Roma® Cheese, Feta, crumbled
  • 1/2 tsp Roma Garlic, chopped
  • 1/4 cup bulls blood micro greens
  • 2 tbsp Roma® Oil, Olive
  • 1/2 Peak Fresh Produce® Onion(s), Red, diced
  • 1/8 tsp Magellan® Black Pepper, ground
  • 1/8 tsp Magellan® sea salt
  • 2 tbsp Magellan® jerk seasoning
  • 1 lb Bay Winds® 26/30 EZ Peel Shrimp
  • 3 oz Asian Pride® Thai chili vinaigrette , (see recipe below)

Asian Pride Thai Chili Vinaigrette

Directions

  1. In a blender or food processor add egg yolk, soy sauce, chili sauce, lime juice, ginger, and honey.
  2. Blend for 1 minute.
  3. While running slowly add sesame oil then olive oil until absorbed.
  4. Pour into bowl and stir in green onion. Refrigerate until needed.

  • 1/4 cup Peak Fresh Produce® Onion(s), Green, finely chopped
  • 1 tbsp Asian Pride® Sweet Chili Sauce
  • 2 tbsp Asian Pride® Sesame Oil
  • 2 tsp Asian Pride® Soy Sauce
  • 1 tbsp vinegar, rice wine
