MEET OUR CHEFS
Chef Lonnie Varisco
A native New Orleanian who grew up with a passion for food. A graduate of the New England Culinary Institute, Chef Lonnie has worked in many of the great kitchens of New Orleans as Executive Chef. He has consulted restaurant operators from the United States to China and appeared on the Food Network. Join us for a special live Braveheart Beef action station on the patio.
Enzo Ferrante - Master Pizziaiolo
Spend an evening with our resident pizza expert as he brings the delicious art of pizza making to life. Classically trained in Italy and certified as a Master Pizziaiolo by the Associazione Pizza Napoletana. A true ambassador for clean eating. Taste for yourself why clean ingredients are the future of pizza.
Chef Joseph Attalla
Joe has over 36 years in foodservice experience working and managing restaurants with a specialty for Italian Cuisine. Joe currently manages our culinary program at Performance Foodservice New Jersey focusing on customer demonstrations and private label consultations.

Anita Williams - Business Development Manager
Anita Williams is a University of Delaware Graduate with 17 years foodservice/Sales experience. Serving in roles such as Area Manager and District Manager, including her current role as Business Development Manager-Braveheart Retail Specialist. Anita is a 4 time Circle of Excellence Winner and a Women of PFG Committee member.
Brian Polter - COP Category Manager
Brian Polter oversees the procurement responsibilities of our Center of the Plate category with a special focus on beef and poultry. Brian also serves as a dedicated field specialist offering experienced consultations for our operators within the protein portfolio.
Ed Custer - COP Specialist
Ed began his foodservice career in a local, family run companies in South Jersey. Currently serving as Protein Specialist at Performance Foodservice New Jersey and Champion of our Braveheart Black Angus Beef PathProven program.
Glenn Bush - Produce Category Manager
With over 30 years of experience managing produce, Glenn is regarded as a category expert within the industry. He oversees all procurement responsibilities for Performance Foodservice New Jersey as well as quality control and safety.
Joe Burns - Non-Foods Specialist
Joe has a robust background in non-foods and chemical supplies within the Foodservice industry. Specializing in product sourcing and field support for independent operators. Joe also serves as champion of small wears and large restaurant grade equipment for Performance Foodservice New Jersey.
Johanna Lenahan - Digital Branding Expert
Johanna oversees the in house Digital Branding Department for Performance Foodservice New Jersey. Our complimentary customer services include food photography, food styling, social media support, menu design and website engineering.
